Watermelon, feta cheese and mint

Watermelon-SaladAs summer is coming to an end we all better make the most of it before autumn takes over. Can we squeeze in another BBQ, just one? I think there is still time.

In a week and a half I will spend some time in the west of Ireland in a cottage at the base of a mountain. My holiday there will mostly depend on the weather but even if it rains I will try and cook some food outdoors.

I usually like to leave the country for holidays to get some sun and sea but this year we are going to Connemara for some rural living. Have you heard of the Dillisk project? I am very excited to visit this boat house turned in to a restaurant, serving some amazing looking experimental food. Pickled sea weed anyone?

For lazy days of reading and BBQ’ing I will rustle up this super easy salad consisting of 3 (only 3) ingredients. Watermelon. Feta cheese. Mint.

The sweet, juicy melon together with little crumbs of salty feta cheese is a surprisingly good combination. Mint adds to the freshness and really just lift this little salad to a dish you will come back to again and again. Serve on the side of some grilled chicken or fish, or as a refreshing snack.

Ingredients
  • 1 large wedge watermelon
  • 50g feta cheese
  • few leaves of mint
Instructions
  1. Cut the melon in to small cubes and arrange on a plate or in a bowl.
  2. Crumble the feta cheese on top of the melon.
  3. Slice the mint leaves and sprinkle on top of the salad.
