Roast red pepper hummus

  • 1 red pepper
  • 1 tin of chickpeas, 400g
  • 1 clove of garlic
  • 1 lemon, juice only
  • 30-50ml vegetable/olive oil
  • chili flakes, salt, pepper, smoked paprika
  1. Grill the pepper til the skin is black. Place the pepper in a bowl and cover with cling film.
  2. After 5-10 minutes, or when the pepper is cooled down enough to handle, peel it and remove the seeds.
  3. Rinse the chick peas in cold water.
  4. Place chick peas, pepper, garlic, lemon juice and oil in a mixer.
  5. Mix until smooth, adding a little bit of water if it seems to thick.
  6. Season to taste with salt and pepper. Depending on how spicy you like it, add chili flakes and smoked paprika.
  7. Drizzle with oil and sprinkle paprika powder on top before serving.
